Peanut Butter Banana Waffles
This batter also makes incredible muffins :)
Peanut Butter Banana Waffles
Servings: 8 mini, 4 large. | Prep Time: 10 Min | Cook Time: 5 Min | Total Time: 15 Min
Gluten-free, vegan & 100% fruit sweetened.
INGREDIENTS
Batter
1 c. organic buckwheat flour
2 tsp baking powder
1 tsp baking soda
2 tsp organic cinnamon
1/2 tsp Himalayan pink salt
1 TBSP ground chia seed + 3 TBSP water to make a chia egg
4 medium very ripe bananas
1 c. organic unsweetened nut milk
4.5 TBSP organic peanut butter or other nut butter.
2 tsp vanilla
12 organic pitted dates
Toppings
Raw nut butter
Unsweetened shredded coconut
Sliced banana
INSTRUCTIONS
Heat a waffle iron – mini or full size
Combine chia meal with water and set aside 5-10 minutes
Combine dry ingredients in a bowl until well combined
Mix dates and bananas in a food processor or high-speed blender until smooth
Add in wet ingredients with dates and bananas and blend
Mix wet and dry ingredients until combined
Spoon ~1/4 c of batter into small waffle iron; ~1/2 c of batter into large waffle iron and cook
Add toppings and enjoy!
