Peanut Butter Banana Waffles

This batter also makes incredible muffins :)

Peanut Butter Banana Waffles

Servings: 8 mini, 4 large. | Prep Time: 10 Min | Cook Time: 5 Min | Total Time: 15 Min


Gluten-free, vegan & 100% fruit sweetened.

INGREDIENTS

Batter

  • 1 c. gluten-free baking flour

  • 1 c. organic buckwheat flour

  • 2 tsp baking powder

  • 1 tsp baking soda

  • 2 tsp organic cinnamon

  • 1/2 tsp Himalayan pink salt

  • 1 TBSP ground chia seed + 3 TBSP water to make a chia egg

  • 4 medium very ripe bananas

  • 1 c. organic unsweetened nut milk

  • 4.5 TBSP organic peanut butter or other nut butter.

  • 2 tsp vanilla

  • 12 organic pitted dates

Toppings

INSTRUCTIONS

  1. Heat a waffle iron – mini or full size

  2. Combine chia meal with water and set aside 5-10 minutes

  3. Combine dry ingredients in a bowl until well combined

  4. Mix dates and bananas in a food processor or high-speed blender until smooth

  5. Add in wet ingredients with dates and bananas and blend

  6. Mix wet and dry ingredients until combined

  7. Spoon ~1/4 c of batter into small waffle iron; ~1/2 c of batter into large waffle iron and cook

  8. Add toppings and enjoy!
