Banana Buckwheat Pancakes

INGREDIENTS

Pancakes

  • 4 TBSP organic buckwheat flour

  • 2 TBSP organic coconut flour

  • 1/4 c organic unsweetened coconut milk

  • 1/2 ripe organic banana

  • 1/8 tsp organic vanilla extract

  • 1/2 TBSP organic apple cider vinegar

  • Pinch organic cinnamon & sea salt

  • 1/2 - 1 tbsp Date Syrup (add more if you prefer more sweetness)

Toppings


INSTRUCTIONS

  1. Combine all ingredients in a food processor until well blended

  2. Heat skillet over medium heat, grease with coconut oil

  3. Spoon on batter & cook ~2 min each side

  4. Add toppings and enjoy!


NOTES

Tip: rest pancakes on a cooling rack until you’re ready to eat them to prevent them from sweating on the plate!
