Banana Buckwheat Pancakes

INGREDIENTS
Pancakes
4 TBSP organic buckwheat flour
2 TBSP organic coconut flour
1/4 c organic unsweetened coconut milk
1/2 ripe organic banana
1/8 tsp organic vanilla extract
1/2 TBSP organic apple cider vinegar
Pinch organic cinnamon & sea salt
1/2 - 1 tbsp Date Syrup (add more if you prefer more sweetness)
Toppings
INSTRUCTIONS
Combine all ingredients in a food processor until well blended
Heat skillet over medium heat, grease with coconut oil
Spoon on batter & cook ~2 min each side
Add toppings and enjoy!
NOTES
Tip: rest pancakes on a cooling rack until you’re ready to eat them to prevent them from sweating on the plate!
