Pumpkin Chocolate Chunk Donut Bites

Donut bites just hit differently. Gluten-free, dairy free, no refined sugar.
INGREDIENTS
Dry Ingredients
1.5 cup GF flour blend
2 tsp baking powder
1/4 tsp baking soda
1/4 tsp Himalayan pink salt
2 tsp pumpkin pie spice
1/4 cup coconut sugar
Wet Ingredients
1 tbsp maple syrup
1/2 tsp apple cider vinegar
1/4 cup + 2 tbsp full-fat unsweetened coconut milk or other nut milk
1/2 cup organic canned pumpkin
2 tbsp coconut oil, melted
3 tbsp unsweetened apple sauce
1/2 EVOLVED dark chocolate bar, chopped
Cinnamon Sugar Topping
2 TBSP coconut sugar
1/2 tsp pumpkin spice
2 tbsp coconut oil, melted
1 tsp maple syrup
INSTRUCTIONS
Donuts
Preheat oven to 350º F
Mix apple cider vinegar with milk and set aside for a few minutes (this is your buttermilk!)
In a medium bowl mix all dry ingredients
In a small bowl mix all wet ingredients
Mix wet with dry
Lightly grease mini donut pan
Pipe (can use a ziplock and snip a hole in one corner) or spoon fill batter in to pan
Bake 12-15 min or until donuts spring back when touched
Cool in pan 5 min, then transfer to cooling rack
Cinnamon Sugar Topping
Mix coconut sugar & cinnamon together in a bowl
Mix melted coconut oil & maple syrup in a separate bowl
Once donuts are completely cooked, dip the tops in coconut oil mixture, then in cinnamon sugar mix
NOTES
Store donuts in an airtight container. Best if eaten within 4-7 days.
