Pumpkin Chocolate Chunk Donut Bites

Donut bites just hit differently. Gluten-free, dairy free, no refined sugar.

INGREDIENTS

Dry Ingredients

Wet Ingredients

  • 1 tbsp maple syrup

  • 1/2 tsp apple cider vinegar

  • 1/4 cup + 2 tbsp full-fat unsweetened coconut milk or other nut milk

  • 1/2 cup organic canned pumpkin

  • 2 tbsp coconut oil, melted

  • 3 tbsp unsweetened apple sauce

  • 1/2 EVOLVED dark chocolate bar, chopped

Cinnamon Sugar Topping

  • 2 TBSP coconut sugar

  • 1/2 tsp pumpkin spice

  • 2 tbsp coconut oil, melted

  • 1 tsp maple syrup

INSTRUCTIONS

Donuts

  1. Preheat oven to 350º F

  2. Mix apple cider vinegar with milk and set aside for a few minutes (this is your buttermilk!)

  3. In a medium bowl mix all dry ingredients

  4. In a small bowl mix all wet ingredients

  5. Mix wet with dry

  6. Lightly grease mini donut pan

  7. Pipe (can use a ziplock and snip a hole in one corner) or spoon fill batter in to pan

  8. Bake 12-15 min or until donuts spring back when touched

  9. Cool in pan 5 min, then transfer to cooling rack

Cinnamon Sugar Topping

  1. Mix coconut sugar & cinnamon together in a bowl

  2. Mix melted coconut oil & maple syrup in a separate bowl

  3. Once donuts are completely cooked, dip the tops in coconut oil mixture, then in cinnamon sugar mix

NOTES

Store donuts in an airtight container. Best if eaten within 4-7 days.
