Grain-Free Cinnamon Raisin Cookies

Servings: 8-10 | Prep Time: 5 Min | Cook Time: 10 Min | Total Time: 15 Min


Grain-free, vegan, no refined sugar.

INGREDIENTS

  • 1 + 1/4 cup walnut flour

  • 3 tbsp walnut butter

  • 4 tbsp coconut flour

  • 3/4 tsp baking soda

  • 2 tbsp coconut oil

  • 1/4 + 1 tbsp maple syrup

  • 1/2 sea salt

  • 1/2 tbsp cinnamon

  • 1/4 cup organic raisins

INSTRUCTIONS

  1. Preheat oven to 350° F

  2. Cover a baking sheet with nonstick baking paper

  3. Mix all ingredients (except raisins) in a food processor until dough forms

  4. Fold raisins into dough

  5. Use a cookie scooper to dish out batter into a ball, then lightly flatten on a baking sheet

  6. Bake for 10 minutes

  7. Cool on pan then devour :)

  8. Store in an airtight container
