Pumpkin Protein Bites

High protein, gluten free, dairy free, refined sugar-free.
INGREDIENTS
1/2 c coconut flour
1/2 c organic unsweetened SunButter
1/2 c organic pumpkin purée
2 tbsp maple syrup
1-2 scoops Vital Proteins Collagen Peptides
1/2 tsp cinnamon
1/2 sea salt
1 Hu Kitchen Pumpkin Spice Dark Chocolate bar, chopped
Flaky sea salt, to taste
INSTRUCTIONS
Blend all ingredients (except the chocolate bar & flaky sea salt) in a food processor until well combined.
Use cookie scoop to divvy up batter into small balls then use your hands to roll balls into shape.
Melt the chocolate bar over low heat in a saucepan.
Toss bites in chocolate until covered then use two forks to transport bites onto a dish covered with parchment baking paper
Freeze for at least 30 minutes then enjoy!
Store in fridge.
NOTES
Omit collagen peptides to make these bites vegan!
