Chocolate Veggie Bread

Moist chocolate bread with hidden veggies. Gluten-free, vegan & no refined sugar.
INGREDIENTS
Wet Ingredients
Chia eggs: 2 tbsp chia meal or flax meal + 5 tbsp water *combine & allow to set for 10 minutes
1/4 c. unsweetened apple sauce
1/4 c. pure maple syrup
1/4 c. coconut sugar
1/4 c. melted coconut oil
1/4 c. oat milk or other nut milk
Dry Ingredients
1.5 tsp baking soda
1 tsp baking powder
1/4 tsp sea salt
3/4 c. gluten free flour blend*
1/3 c. brown rice flour
1/3 c. walnut meal
1.5 c. broccoli & carrot slaw
Mix-ins
1 dark chocolate bar, chopped
INSTRUCTIONS
Heat oven to 350°F & line load pan with nonstick parchment paper
Mix wet ingredients in food processor until combined
In a separate bowl mix together dry ingredients (expect the chocolate bar) then add to food processor and mix on dough, or low, setting until combined.
Mix in half the chopped chocolate bar with a spatula.
Pour dough in lined loaf pan & sprinkle the other half of the chocolate bar on top.
Bake for 55-60 min.
Cool in pan for 15 min then transfer to cooling rack.
For best consistency, allow to cool completely before enjoying.
