Black Lentil Veggie Soup

1-pot easy recipe, ready in 30 minutes. Gluten-free & dairy free.

INGREDIENTS

  • 3/4 cup dried black lentils

  • 1/2 - 1 cup celery pulp (leftover from juicing) or 1/4 cup chopped celery

  • 1/4 yellow onion, chopped

  • 1 tbsp extra virgin olive oil

  • 1 cup frozen spinach

  • 1 cup cauliflower rice

  • Juice of 1/2 lime

Seasonings – to taste


INSTRUCTIONS

  1. Rinse and drain lentils, set aside

  2. In a large sauce pan, sauté onion & celery pulp in olive oil until fragrant, 2-3 minutes

  3. Add in veggies, broth, seasoning, and lentils

  4. Bring to boil then reduce to simmer & cover the pot with a lid for 30 minutes

  5. Add in lime juice once the soup is done simmering

  6. Top with fresh cilantro, avocado & hemp seeds
