Chocolate Pumpkin Donuts

Pumpkin Chocolate Donuts

You won't believe these donuts are gluten-free, vegan, and refined sugar-free! The flavor combo is as good as the donuts are moist.

INGREDIENTS

Dry

  • 3 cups GF flour blend*

  • 4 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp Himalayan pink salt

  • 4 tsp pumpkin pie spice

  • 1/2 c brown coconut sugar

  • 1/2 c cacao powder


Wet

  • 2 tbsp maple syrup

  • 1 tsp apple cider vinegar

  • 3/4 c full-fat unsweetened coconut milk or other nut milk

  • 1 cup puréed pumpkin

  • 4 tbsp coconut oil, melted

  • 6 tbsp unsweetened apple sauce


INSTRUCTIONS

  1. Preheat oven to 350°F

  2. Lightly grease 3 donut pans with coconut oil.

  3. Mix dry ingredients in large mixing bowl.

  4. In separate bowl mix wet ingredients.

  5. Combine wet and dry until well combined.

  6. Pour batter into large ziplock bag and make a small cut on the end of one corner. Pipe batter into lightly greased donut pans.

  7. Shake pans to flatten out batter.

  8. Bake for 12 minutes.

  9. While donuts bake, melt 1/2 of a dark chocolate bar + 2 tbsp coconut oil and set aside

  10. Allow donuts to cool in pan for 5 minutes, then transfer to cooling rack for 10 minutes.

  11. Once cooled, drizzle melted chocolate on top of donuts.

  12. Store in airtight container in the refrigerator.
