Sweet Potato Breakfast Scramble

A warm and hearty, single-serving, treat-yo-self meal worthy of the queen/king you are. Put the kettle on and enjoy the comfort of nourishing food.

INGREDIENTS

  • 1/4 c. organic red lentils

  • 1/4 organic sweet potato, thinly sliced then diced

  • 2 mini sweet bell peppers or 1/2 regular bell pepper, chopped

  • Large handful organic spinach

  • 1/2 TBSP coconut oil

  • 2 TBSP organic yellow onion, chopped

  • 2 spoonfuls Trader Joes' Vegan Kale, Cashew & Basil Pesto

INSTRUCTIONS

  • Rinse lentils in a strainer until water runs clear, then pat dry

  • Bring to boil 1 c. filtered water in a small saucepan, then stir in lentils

  • Reduce heat to a simmer, cover and cook 15 minutes

  • Melt coconut oil in a medium skillet over med/high heat

  • Add onion and sweet potato, cook 5-10 minutes until sweet potatoes are almost completely tender

  • Add in all veggies and pesto and sauté until cooked to desired tenderness

  • Serve with hummus or avocado
