Pumpkin Waffles – Gluten free, Vegan
Pumpkin Waffles

Gluten-free, vegan, and no refined sugar.
INGREDIENTS
Batter
1.5 c unsweetened nut milk
1/2 c organic 100% pumpkin purée
3 TBSP melted coconut oil
1 tsp vanilla extract
2 TBSP ground flaxseed (flax meal)
1 c almond flour (not almond meal)
1 TBSP baking powder
1/2 tsp baking soda
2 tsp pumpkin pie spice
Pinch Himalayan pink salt
Toppings
Raw almond butter
Organic blueberries
Hemp seeds
Unsweetened shredded coconut
100% pure maple syrup
INSTRUCTIONS
Mix all ingredients until well combined
Cook in greased waffle iron
For pancakes, cook in a skillet for 2-3 minutes on each side or until browned
Top with goodies of your choice
