Pumpkin Waffles – Gluten free, Vegan

Pumpkin Waffles

Gluten-free, vegan, and no refined sugar.

INGREDIENTS

Batter

  • 1.5 c unsweetened nut milk

  • 1/2 c organic 100% pumpkin purée

  • 3 TBSP melted coconut oil

  • 1 tsp vanilla extract

  • 2 TBSP ground flaxseed (flax meal)

  • 1 c gluten-free flour blend

  • 1 c almond flour (not almond meal)

  • 1 TBSP baking powder

  • 1/2 tsp baking soda

  • 2 tsp pumpkin pie spice

  • Pinch Himalayan pink salt

Toppings

  • Raw almond butter

  • Organic blueberries

  • Hemp seeds

  • Unsweetened shredded coconut

  • 100% pure maple syrup

INSTRUCTIONS

  1. Mix all ingredients until well combined

  2. Cook in greased waffle iron

  3. For pancakes, cook in a skillet for 2-3 minutes on each side or until browned

  4. Top with goodies of your choice
