Gluten-free Tortillas

Gluten-free Brown Rice Tortillas

Soft and foldable gluten-free tortillas.

INGREDIENTS

Tortillas

  • 1/2 c organic quinoa flour

  • 1/4 c organic tapioca starch

  • 3/4 tsp psyllium husk powder

  • 1/2 tsp Himalayan pink sea salt

  • 6 tbsp warm water

  • 1.5 tbsp avocado oil

Toppings

  • Organic avocado

  • 1 can organic black beans

  • 1/4 salsa verde

  • Small handful fresh cilantro

  • To taste: cumin, onion powder, sea salt

INSTRUCTIONS

Tortillas

  1. Combine all ingredients until dough forms

  2. Add more water if the texture is too dry

  3. Roll dough into four small balls

  4. Use a tortilla press or flatten with your hands

  5. Cook in a skillet on med/high heat for 2-3 minutes on each side until browned

Toppings

  1. Rinse and drain black beans

  2. In a medium saucepan, combine black beans, salsa verde, cumin, cilantro, onion powder, and sea salt

  3. Slightly mash and scoop onto tortillas
