Gluten-free Lemon & Garlic Shrimp Pasta

INGREDIENTS
Pasta
10 wild-caught shrimp, peeled
1 cup gluten-free pasta
1/2 organic zucchini, chopped
Juice of 1/2 organic lemon
3 garlic cloves, chopped
1-2 tbsp extra virgin olive oil
Himalayan pink salt & black pepper, to taste
Parsley Paste
1/4 cup extra virgin olive oil
1 bunch fresh parsley
1/2 tsp garlic powder
Sea salt to taste
INSTRUCTIONS
Pasta
Heat EVO in a large skillet on med/high heat
Sauté garlic for 1 min until fragrant
Add peeled shrimp, zucchini, lemon juice & spices
Cover with lid, reduce to low, and cook 8-10 min
Meanwhile, cook 1 cup of gluten-free pasta
Strain and rinse noodles
Toss noodles in 1 tbsp parsley paste
Combine pasta with the rest of the ingredients
Parsley Paste
Blend on high until all ingredients are well combined
Store in the fridge
