Gluten-free Lemon & Garlic Shrimp Pasta

INGREDIENTS

Pasta

  • 10 wild-caught shrimp, peeled

  • 1 cup gluten-free pasta

  • 1/2 organic zucchini, chopped

  • Juice of 1/2 organic lemon

  • 3 garlic cloves, chopped

  • 1-2 tbsp extra virgin olive oil

  • Himalayan pink salt & black pepper, to taste

Parsley Paste

  • 1/4 cup extra virgin olive oil

  • 1 bunch fresh parsley

  • 1/2 tsp garlic powder

  • Sea salt to taste

INSTRUCTIONS

Pasta

  1. Heat EVO in a large skillet on med/high heat

  2. Sauté garlic for 1 min until fragrant

  3. Add peeled shrimp, zucchini, lemon juice & spices

  4. Cover with lid, reduce to low, and cook 8-10 min

  5. Meanwhile, cook 1 cup of gluten-free pasta

  6. Strain and rinse noodles

  7. Toss noodles in 1 tbsp parsley paste

  8. Combine pasta with the rest of the ingredients

Parsley Paste

  1. Blend on high until all ingredients are well combined

  2. Store in the fridge
