Chickpea Blondies

Chickpeas are a great alternative to gluten-based recipes and also add nutrients, fiber, and protein to an otherwise nutritionally bleak treat. These doughy delicacies are a great gluten-free, vegan dessert or pick-me-up snack on the go.
INGREDIENTS
1 c. gluten-free flour blend
1/3 c. + 2 TBSP organic coconut sugar
1/4 c. gluten-free oats
1/4 tsp baking soda
1/2 tsp baking powder
2 tsp cinnamon
1 15oz can organic chickpeas
1/2 c. unsweetened organic peanut butter
1 15oz can organic chickpeas
1/2 tsp vanilla
INSTRUCTIONS
Preheat oven to 350° F
Grease an 8x8 baking pan
Rinse and drain chickpeas, pat dry with a towel
Mix all ingredients except chocolate chips in a food processor until a dough is formed
Fold in chocolate chips by hand
Flatten the dough in a baking pan with a spatula
Bake 20-25 minutes or until a toothpick comes out clean
Cool for 20 minutes on a cooling rack, or eat straight from the pan
