10-Minute Breakfast Scramble

Gluten-free, dairy-free, veggie-packed scramble.
INGREDIENTS
2 slices organic turkey bacon
2 tbsp extra virgin olive oil, divided
1/4 yellow onion, diced
1/2 medium sweet potato, skinned and cubed
1/2 organic zucchini, cubed
1 large handful of organic spinach
Sea salt and garlic powder, to taste
Small handful go RAW Sprouted Organic Pumpkin Seeds
Small handful of organic hemp seeds
Spoonful of vegan cream cheese
INSTRUCTIONS
Toss sweet potato in 1 tbsp EVO, sea salt, and onion powder to taste and cook in an air fryer at 375ºF for 10-12 minutes, shaking halfway
Meanwhile, heat 1 tbsp EVO in a large skillet over med/high heat
Sauté onion ~1 minute until fragrant
Add in veggies, sea salt, and onion powder to taste, and cook for 5 minutes, stirring occasionally
Pan fry turkey bacon for a few minutes on each side until desired crispiness
Combine sweet potatoes, veggies, and bacon in a bowl. Top with pumpkin seeds, hemp seeds, and vegan cream cheese.
