10-Minute Breakfast Scramble

Gluten-free, dairy-free, veggie-packed scramble.

INGREDIENTS

  • 2 slices organic turkey bacon

  • 2 tbsp extra virgin olive oil, divided

  • 1/4 yellow onion, diced

  • 1/2 medium sweet potato, skinned and cubed

  • 1/2 organic zucchini, cubed

  • 1 large handful of organic spinach

  • Sea salt and garlic powder, to taste

  • Small handful go RAW Sprouted Organic Pumpkin Seeds

  • Small handful of organic hemp seeds

  • Spoonful of vegan cream cheese

INSTRUCTIONS

  1. Toss sweet potato in 1 tbsp EVO, sea salt, and onion powder to taste and cook in an air fryer at 375ºF for 10-12 minutes, shaking halfway

  2. Meanwhile, heat 1 tbsp EVO in a large skillet over med/high heat

  3. Sauté onion ~1 minute until fragrant

  4. Add in veggies, sea salt, and onion powder to taste, and cook for 5 minutes, stirring occasionally

  5. Pan fry turkey bacon for a few minutes on each side until desired crispiness

  6. Combine sweet potatoes, veggies, and bacon in a bowl. Top with pumpkin seeds, hemp seeds, and vegan cream cheese.
